Roasting broccoli is one of the most hands-off ways to cook broccoli to perfection. You don’t need any special skills or much preparation. It comes down to the seasoning and cook time, which I’ll walk you through! Here’s what you need to do to roast your broccoli:
- Preheat the oven to 375°F. Line a baking sheet with parchment paper.
- Cut your broccoli into florets (if you have a head of broccoli) and lay them on the baking sheet evenly.
- Drizzle generously with olive oil and season with salt and pepper.
- Bake for 30-35 minutes until crispy on the outside and soft when poked with a fork.
Ingredients for Roasted Broccoli
The ingredients for roasted broccoli are some you may already have in your kitchen including:
- Broccoli – fresh broccoli works best with this recipe. They can be pre-cut or heads of broccoli.
- Olive oil (or alternative vegetable oil) – my preference is olive oil, but avocado, seed, or coconut oil can also work.
- Salt & pepper to taste
- Additional toppings and seasonings: garlic, parmesan, chili flakes, herbs, etc.

When I say salt and pepper to taste, it can feel very vague. Everyone has a different flavor and seasoning preference, and it may take a time or two of roasting broccoli to get the seasoning amount perfect.
What I love to do to season my roasted vegetables is to take pinches using three fingers, and spread evenly over the dish. This gives me the most control.
Depending on preference, some other seasoning options to make roasted broccoli more fun include adding:
- crushed or roasted garlic
- lemon
- chili flakes
- parmesan cheese
- other herbs
Tips for Roasting Broccoli
- Be generous with the olive oil, but careful not to drench the broccoli. It’s important to get a good coating of oil over all the florets, but you don’t want to drown the broccoli in oil because it won’t end up crispy.
- Feel free to include the broccoli stems. Just because most pre-cut bagged broccoli doesn’t include much of the stem doesn’t mean it isn’t delicious!
- Check on your broccoli at the 25 minute mark. Every oven works differently, so from 25-35 minutes, check on the crispiness occasionally and check for softness with a fork.
