This easy apple chickpea salad is fresh, crunchy, and packed with cucumber, juicy tomatoes, crisp apples, garbanzo beans, onion, and feta. Everything gets tossed in a simple lemon, olive oil, and white wine vinegar dressing for an easy side dish that comes together in about 15 minutes.
Chop the cucumber and apple into bite-sized pieces. Halve or quarter the tomatoes, depending on their size, and roughly chop the onion.
1 large cucumber, 1 medium apple, 1 pint cherry or grape tomatoes
Add the garbanzo beans, cucumber, apple, tomatoes, onion, and feta to a large serving bowl.
1 can, 1 medium white or yellow onion, ½ cup crumbled feta cheese
Drizzle the olive oil and white wine vinegar over the salad, then squeeze the juice from half a lemon over everything.
3 tablespoons olive oil, 1 tablespoon white wine vinegar, Juice of ½ lemon
Add salt and freshly ground black pepper to taste.
¼ teaspoon black pepper, ½ teaspoon salt
Gently toss until everything is evenly coated. Sprinkle additional feta over the top before serving.
Notes
For the best texture, serve this salad shortly after making it so the cucumber and apple stay crisp. If you’re making it ahead, you can combine everything except the dressing and add the olive oil, vinegar, and lemon shortly before serving.The lemon also helps keep the chopped apple from browning.
