Ingredients
  

  • 1 tbsp olive oil
  • 2 chicken breasts
  • 2 pizza crusts with cornmeal for handling dough
  • 1/2 cup sweet & tangy barbecue sauce
  • 3 tbsp smoked gouda cheese
  • 2 cups shredded mozzarella
  • 1/2 red onion sliced
  • 1 tsp oregano
  • 3 tbsp fresh cilantro
  • parmesan cheese for garnish

Method
 

  1. Preheat the oven to 475°F.
  2. Slice the chicken breasts in half length wise, so you have four thin pieces. heat a skillet with olive oil. Season chicken with salt and pepper, then cook for 6 minutes per side on medium high heat. Let it rest, then slice into bite-sized cubes.
  3. Spread BBQ sauce over each pizza crust, then add mozzarella and gouda. Top with chicken, red onion slices, and a sprinkle of parmesan.
  4. Bake for 12-15 minutes or until the cheese is bubbling. Top with fresh cilantro right before serving.
