Ingredients

  • 8 strips of bacon
  • 4 carrots chopped
  • 3/4 cups frozen peas
  • 4 cups cooked rice
  • 3 eggs beaten
  • 3 tbsp soy sauce
  • 3 tbsp butter
  • salt to taste
  • green onions

Equipment

  • Blackstone Griddle

Method

  1. Preheat your Blackstone griddle on medium heat. Place the bacon strips on the griddle and cook until crispy, about 7 minutes. Once done, use your spatula to break the bacon into small 1/2-inch pieces.
  2. Push the bacon aside and add the chopped carrots and frozen peas to the griddle. Sauté for about 5 minutes, or until the carrots are softened.
  3. Add the cold cooked rice to the griddle, mixing it with the vegetables and bacon until combined.
  4. Create a small well in the center of the rice mixture and pour the beaten eggs in. Stir the eggs into the rice until fully cooked.
  5. Add the soy sauce and butter, mixing them into the fried rice. Cook for another 2 minutes, allowing the flavors to combine.
  6. Add salt to taste and garnish with freshly chopped green onions.

Notes

  • Use cold rice: Freshly cooked rice can be too soft and sticky for fried rice. Cold, day-old rice works best.
  • Customize the veggies: Feel free to swap out or add in different vegetables based on your preferences or what you have available.
  • Don’t overcook the eggs: When adding the beaten eggs, be sure to stir them quickly into the rice to avoid overcooking.
  • Crisp up the rice: Let the rice sit on the griddle for a few minutes without stirring to allow it to get crispy for extra texture.
