Prepare your chicken breasts by slicing each breast into three even pieces, about 1 inch thick. Season each side with salt and pepper.
Heat olive oil in a skillet on medium-high eat and cook chicken breasts for 3 minutes on each side or until internal temperature is at 165°F. Once cooked, remove and let sit.
Add more oil to the pan and deglaze by scraping lightly to lift the remaining chicken bits.
Sauté onions and garlic for about 6 minutes or until softened, making sure not to burn.
Add mushrooms and cook for another 6 minutes or until softened.
Add herbs, salt, and pepper, and mix.
Pour in your cream and let the sauce thicken for about 5 minutes.
Turn off the heat and add the grated parmesan.
Add sauce to cooked noodles and toss to combine. Top with chicken breast, parmesan, and more fresh or dried herbs.
