Creamy Chicken & Mushroom Pasta

Ingredients
  

  • 3 tbsp olive oil
  • 1 1/2 pounds chicken breasts
  • 1 large onion chopped
  • 4 cloves garlic minced or grated
  • 2 pounds mushrooms three types (ex. portobello, white, oyster)
  • 2 tsp italian seasoning
  • 1/2 tsp dried parsley
  • 1/2 tsp dried basil
  • 2.5 cups heavy cream
  • 1 cup parmesan grated
  • salt & pepper to taste
  • 1 pound pasta noodles

Instructions
 

  • Prepare your chicken breasts by slicing each breast into three even pieces, about 1 inch thick. Season each side with salt and pepper.
  • Heat olive oil in a skillet on medium-high eat and cook chicken breasts for 3 minutes on each side or until internal temperature is at 165°F. Once cooked, remove and let sit.
  • Add more oil to the pan and deglaze by scraping lightly to lift the remaining chicken bits.
  • Sauté onions and garlic for about 6 minutes or until softened, making sure not to burn.
  • Add mushrooms and cook for another 6 minutes or until softened.
  • Add herbs, salt, and pepper, and mix.
  • Pour in your cream and let the sauce thicken for about 5 minutes.
  • Turn off the heat and add the grated parmesan.
  • Add sauce to cooked noodles and toss to combine. Top with chicken breast, parmesan, and more fresh or dried herbs.
