from canned chipotle peppers

Instructions
Pat chicken dry and cut into bite sized pieces or thin strips.
Heat olive oil in a skillet over medium heat. Add onion and cook until soft.
Stir in garlic and spices. Cook until fragrant.
Add adobo sauce and cook briefly.
Add chicken and cook until fully cooked and lightly caramelized.
Remove from heat and stir in fresh lime juice.
Rest for two to three minutes before serving.
Notes
Cut chicken evenly for consistent cooking.
Do not overcrowd the pan to allow caramelization.
Adjust spice level with more or less adobo sauce.
Finish with fresh lime juice for the best flavor.
