This chipotle chicken recipe is smoky, juicy, and packed with bold flavor. A simple copycat chipotle chicken recipe perfect for burritos, bowls, and meal prep.
Pat chicken dry and cut into bite sized pieces or thin strips.
1½ lbs boneless chicken breast
Heat olive oil in a skillet over medium heat. Add onion and cook for five to six minutes, stirring occasionally, until the onion is soft and lightly golden.
2 tbsp olive oil, ½ yellow onion
Stir in garlic and spices. Cook until fragrant, about 30 seconds.
3 cloves garlic, 1 tsp chili powder, 1 tsp ground cumin, ½ tsp oregano, ¾ tsp kosher salt, ½ tsp black pepper
Stir in the adobo sauce and cook for another 30 to 60 seconds.
2 tbsp adobo sauce
Add chicken and cook for six to eight minutes, stirring occasionally, until the chicken is cooked through and lightly caramelized on the edges.
Remove from heat and stir in fresh lime juice.
1 to 2 tbsp lime juice
Rest for two to three minutes before serving.
