Ingredients
  

For the Chicken:

  • 2 lbs chicken breast
  • 1/2 cup Greek yogurt
  • 1 juiced lemons with 2 tsp lemon zest
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 2 tsp salt
  • 4 tsp paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp coriander
  • 1 tsp black pepper
  • Pinch of salt to taste
  • Pita bread

For the Greek Salad:

  • 2 cups of cherry tomatoes
  • 1 English cucumbers
  • 8 oz Feta cheese
  • 3 tbsp Olive oil

For the Tzatziki Sauce:

  • 1 English cucumbers
  • 1 tsp salt
  • 4 garlic cloves minced
  • 1 tsp white vinegar
  • 1 tbsp olive oil
  • 3/4 cups Greek yogurt
  • 1/4 c fresh dill

Instructions
 

  • Cut the Chicken: Slice the chicken into thin, even pieces.
  • Prepare the Chicken Marinade: In a large bowl, mix the Greek yogurt, lemon juice, lemon zest, olive oil, minced garlic, salt, paprika, cumin, oregano, coriander, and black pepper. Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 2 hours, or overnight for the best flavor.
  • Bake the Chicken: Preheat your oven to 350°F (175°C). Place the marinated chicken breasts on a baking sheet and bake for 30 minutes, or until the internal temperature reaches 165°F (74°C). Once cooked, let the chicken rest for 5 minutes, then slice into thin strips.
  • Make the Tzatziki Sauce: While the chicken is baking, prepare the tzatziki sauce. Start by grating the cucumbers and sprinkling them with salt. Let them sit for 10 minutes, then squeeze out the excess water. In a bowl, mix the cucumbers, minced garlic, white vinegar, olive oil, Greek yogurt, and chopped dill until well combined. Set aside.
  • Make the Greek Salad: Combine halved cherry tomatoes, sliced cucumbers, feta cheese, olive oil to make a salad.
  • Assemble the Gyros: Warm the pita bread, then layer on the sliced chicken and the greek salad. Drizzle generously with tzatziki sauce. Wrap up the pita and enjoy!

Notes

  • Marinating Time: The longer you marinate the chicken, the more flavorful it will be. For the best results, marinate overnight.
  • Pita Bread: Warm the pita bread before assembling the gyros. You can do this in the oven, on the stovetop, or in the microwave.
  • Tzatziki Sauce: For a thicker tzatziki sauce, you can strain the Greek yogurt before mixing it with the other ingredients.
  • Storing Leftovers: Store any leftover chicken, veggies, and tzatziki sauce separately in airtight containers in the refrigerator. They should stay fresh for 3-5 days depending on your home and climate.
  • Reheating: My favorite most tried and true way to reheat the chicken is with a small amount of olive oil in a skillet on medium heat for a few minutes on each side. It's quick and simple, and reheats it well each time.
