Ingredients
  

  • 1 English cucumber partially peeled and grated
  • 1 teaspoon salt
  • 4 garlic cloves minced
  • 1 teaspoon white vinegar
  • 1 tablespoon olive oil
  • 3/4 cup Greek yogurt
  • 1/4 cup fresh dill finely chopped

Instructions
 

  • Grate the cucumber and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture.
  • In a bowl, mix the grated cucumber, garlic, white vinegar, olive oil, Greek yogurt, and dill.
  • Stir until well combined and refrigerate for at least 30 minutes before serving.

Notes

  • For a smoother sauce, blend all the ingredients in a food processor.
  • Adjust garlic to taste if you prefer a milder or stronger garlic flavor.
  • If making ahead, give it a good stir before serving as the cucumber may release more liquid over time.
  • For an extra creamy version, add 1 tablespoon of extra virgin olive oil.
  • Use full-fat Greek yogurt for an even higher protein content.
