Heat a large skillet over medium heat and add the vegetable oil. Once the oil is shimmering, add the minced garlic and grated ginger. Let them sizzle for a minute until the heavenly aroma fills the air.
Add the onions and cook until softened. Move onions to one side of the skillet to make room for the beef.
Gently place the ground beef into the skillet, breaking it apart with a spatula as it cooks. Sauté the beef until it's browned and cooked through, usually about 5-7 minutes.
When the beef is cooked, add the soy sauce, brown sugar, mirin, and chili flakes, stirring until the beef is coated evenly. Let it simmer for another 2-3 minutes to let the flavors meld together.
