Instructions
Heat oil in a large Dutch oven over medium heat. Add onion, bell pepper, green beans, carrots, and garlic. Cook for 8–10 minutes until softened.

Stir in curry paste, brown sugar, and soy sauce. Cook 1–2 minutes, stirring constantly.

Add chicken, season lightly, and stir to coat.

Pour in coconut cream and chicken broth. Stir well.

1 cup chicken broth
Bring to a simmer. Reduce heat, cover, and cook for 20–25 minutes.
Stir in Thai basil, if using. Adjust seasoning to taste.

Serve over long-grained rice and garnish with lime and cilantro (if desired).

Notes
Use coconut milk if you don’t have coconut cream.
Chicken thighs stay extra juicy and are a great substitute.
Add more curry paste or red pepper flakes if you like heat.
For a thicker curry, simmer uncovered the last 5–10 minutes.
