This Apple Cucumber Salad with Chickpeas is one of those recipes that tastes just as fresh as it looks! My dad actually created this salad, and as soon as I tried it I knew it had to be shared!
We love having a fresh, filling salad that’s completely lettuce-free but still packed with plenty of crunch and flavor. The crisp cucumber, juicy tomatoes, chickpeas, and feta are so good together, but the apple is what really makes it special. It adds the perfect touch of sweetness and crunch! It’s tossed with a simple lemon and olive oil dressing, and has easily become one of our favorite bean salads to make!

Apple Chickpea Cucumber Salad
Ingredients
- 1 can 15 oz garbanzo beans, drained and rinsed
- 1 large cucumber chopped
- 1 medium apple cored and chopped
- 1 pint cherry or grape tomatoes halved or quartered
- 1 medium white or yellow onion chopped
- ½ cup crumbled feta cheese plus more for topping
- 3 tablespoons olive oil
- 1 tablespoon white wine vinegar
- Juice of ½ lemon
- ½ teaspoon salt or to taste
- ¼ teaspoon black pepper or to taste
Instructions
- Chop the cucumber and apple into bite-sized pieces. Halve or quarter the tomatoes, depending on their size, and roughly chop the onion.1 large cucumber, 1 medium apple, 1 pint cherry or grape tomatoes
- Add the garbanzo beans, cucumber, apple, tomatoes, onion, and feta to a large serving bowl.1 can, 1 medium white or yellow onion, ½ cup crumbled feta cheese
- Drizzle the olive oil and white wine vinegar over the salad, then squeeze the juice from half a lemon over everything.3 tablespoons olive oil, 1 tablespoon white wine vinegar, Juice of ½ lemon
- Add salt and freshly ground black pepper to taste.¼ teaspoon black pepper, ½ teaspoon salt
- Gently toss until everything is evenly coated. Sprinkle additional feta over the top before serving.
