This Apple Cucumber Salad with Chickpeas is one of those recipes that tastes just as fresh as it looks! My dad actually created this salad, and as soon as I tried it I knew it had to be shared!

We love having a fresh, filling salad that’s completely lettuce-free but still packed with plenty of crunch and flavor. The crisp cucumber, juicy tomatoes, chickpeas, and feta are so good together, but the apple is what really makes it special. It adds the perfect touch of sweetness and crunch! It’s tossed with a simple lemon and olive oil dressing, and has easily become one of our favorite bean salads to make!

Notes

For the best texture, serve this salad shortly after making it so the cucumber and apple stay crisp. If you’re making it ahead, you can combine everything except the dressing and add the olive oil, vinegar, and lemon shortly before serving.
The lemon also helps keep the chopped apple from browning.
