What You’ll Need: Key Ingredients
- Chicken breast: I prefer to use chicken breast for this recipe, as I’m able to cut it into even pieces more easily.
- Three mushrooms: this recipe calls for three mushroom types of your choice. My favorite combination is: portobello, white, and oyster mushrooms.
- Onions & garlic: this brings depth and robust flavor to the sauce.
- Heavy cream: we will use cream to create the cream sauce.
- Parmesan: this gives the perfect sharp and salty taste to the sauce. You can also garnish your dish with parmesan.
- Herbs: a variety of herbs give the sauce a delicious and aromatic flavor.
How To Make the Creamy Mushroom Sauce
- Prepare your chicken breasts by slicing each breast into three even pieces, about 1 inch thick. Season each side with salt and pepper.
- Heat olive oil in a skillet on medium-high eat and cook chicken breasts for 3 minutes on each side or until internal temperature is at 165°F. Once cooked, remove and let sit.
- Add more oil to the pan and deglaze by scraping lightly to lift the remaining chicken bits.
- Sauté chopped onions and garlic for about 6 minutes or until softened, making sure not to burn.
- Add mushrooms and cook for another 6 minutes or until softened.
- Add herbs, salt, and pepper, and mix.
- Pour in your cream and let the sauce thicken for about 5 minutes.
- Turn off the heat and add the grated parmesan.
- Add sauce to cooked noodles and toss to combine. Top with chicken breast, parmesan, and more fresh or dried herbs.

- 1/2 tsp dried parsley
- 1/2 tsp dried basil
- 2.5 cups heavy cream
- 1 cup parmesan grated
- salt & pepper to taste
