You’ll need the following staple ingredients to make this chicken tortilla soup recipe:

  • Vegetables: I personally love the combination of an onion, bell peppers, tomatoes (canned or fresh) and corn
  • Beans: black beans are the most popular bean to add to this soup, however you can mix it up with pinto or kidney beans if desired
  • Chicken broth: to help make the base of the soup
  • Chicken breast: throughout the process, the chicken will cook to be the perfect texture and tenderness
  • Cilantro, lime, salt, & pepper: to give our soup the best flavor
  • Desired toppings: favorite toppings include cilantro, cheese, tortilla chips (must-add), avocado, and sour cream.

How to Make Chicken Tortilla Soup in the Crock Pot:

There are only a few key steps to this recipe, including:

  1. Sauté garlic, onions, and bell pepper in a pan with olive oil for 7 minutes. Transfer into the crockpot/slow cooker.
  2. Add all other ingredients to the slow cooker including chicken broth, chicken breasts, corn, black beans, and your tomatoes. If you’re using fresh tomatoes, blend them before adding to the slow cooker.
  3. Cook on high for 4-5 hours or on low for 6-8 hours.
  4. Remove the lid to the slow cooker and shred the chicken. Add the shredded chicken back into the pot and cook in with the lid off for a few minutes before serving with your favorite toppings.

  • 1 28 oz can crushed tomatoes (or 20 fresh tomatoes blended)
  • 2 cups chicken broth
  • 2 chicken breasts
  • 2 tbsp lime
  • 1/4 cup cilantro
  • salt & pepper

    1. You can use your instant pot, for sure! I would click on the soup/stew setting, or on high pressure for 10 minutes, and giving it 10 minutes to release pressure. Happy cooking!
