You won’t want to buy dry pasta again with how easy this recipe is once you learn this recipe for homemade pasta! We haven’t bought pasta from the store in ages, and this is why!

How to Make Homemade Pasta
Ingredients for Homemade Pasta Recipe:
You’ll need the following four ingredients to make your dough:
- Flour – I use a simple all-purpose flour to make my noodles. You can also use semolina flour or 00 flour.
- Eggs – you’ll need a few eggs for this recipe
- Olive oil – this helps to give some moisture to the pasta dough
- Salt – this enhances the flavor in your dough
What equipment do I need to make homemade pasta?
This recipe can be made one of two ways: with a pasta machine, either manual or a kitchen aid attachment, OR you can also make it using a rolling pin and a knife. We do absolutely love our kitchen aid and our pasta attachment, which both make this process quicker and easier!
But, if you’re like me, cooking can be therapeutic, so I like to switch it up every now and then by using my favorite french rolling pin and my very own arm muscles.
How to make pasta dough
Step 1: Make a nest with your flour on a work surface, creating walls that will hold the remaining ingredients.
Step 2: Add your eggs, olive oil, and salt to the center of the nest.
Step 3: Using a fork, break your egg yolks and give the ingredients a little whisk.
Step 4: With your hands, start to fold the flour in and combine the flour with the egg mixture, forming a shaggy dough ball.
Step 5: Knead the dough for 8-10 minutes, and it will start to form a smooth ball of dough!
Step 6: Roll the dough into a ball, cover with a clean kitchen towel or plastic wrap, and let it sit for 20 minutes.
Step 7: After it sits, cut the ball into four equal pieces.
Now, here’s Part II, where you get to decide which method you’re going to use:
Pasta Maker Method:
Step 1: Roll each piece into a ball and flatten with your palm.
Step 2: Run the oval through the widest setting of your pasta maker. Then, fold the short ends of your dough toward the center, to form a rectangle (see image).
Step 3: Then, you’ll want to run the pasta dough through the following sequence:
- 3 x the widest setting
- 3 x the 2nd widest setting
- 3 x the 3rd widest setting
- 1 x the 4th widest setting
- 1 x the 5th widest setting
- 1 x the 6th widest setting
Step 4: Repeat this sequence with all the dough pieces, then sprinkle each long rectangle with flour to prevent from sticking.
Step 5: Cut the pasta or run it through your desired pasta cut setting.
Step 6: Cook the fresh noodles in boiling water for 1-2 minutes.
Rolling Pin & Knife Method:
Step 1: Roll each piece into a ball and flatten with your palm.
Step 2: Using a rolling pin, roll out the dough into a long strip. Then, fold the short ends of your dough toward the center, to form a rectangle (see image).
Step 3: Roll out the dough into a long rectangular sheet. Roll the dough until it’s at your desired thickness (I always aim for about 2mm thick).
Step 4: Repeat this process with all the dough pieces, then sprinkle each long rectangle with flour to prevent from sticking.
Step 5: Fold the dough in thirds and use a knife to cut the pasta dough into noodles.
Step 6: Cook the fresh noodles in boiling water for 1-2 minutes.
